“Ek cutting chai Lana” (bring one cutting chai) is a slang generally used in Mumbai (old name Bombay) where the chaiwallahs (the tea vendors) prepare this tea and serve it in a special glass which is not kept full rather only half of the glass is served …..that’s why called cutting chai. We use Assam premium CTC tea and hand-pounded spices to make this blend and bring to you the cup on which not only Bombay runs rather more or less the whole of India. An extremely refreshing cup of this tea is sure to energize and revamp you and give that extra dose of fuel to the stressed body. Best enjoyed piping hot..!!

INGREDIENTS:

High-quality Assam black tea leaves, cardamom, Ginger, and fennel seeds

STEEPING NOTES:

Water Qty: 200ml

Tea Qty: 2 Grams or 1 tsp

Temp to Boil: 100°c

Steep Time: 4-5 Minutes

Strain and serve.

The Indian style of preparing this Golden Blend is to boil 200 ml of water in a pan, add one teaspoonful of Bombay Cutting Chai, and let it simmer for 5-6 minutes. Then add milk and sugar as per taste and simmer for another 5 minutes. Strain and enjoy…!!

TASTE NOTES:

Strong full-bodied Cup with robust and malty flavour and lingering spicy mouthfeel.

Suggested Condiments :

1) Drink plain
2) Add Milk
3) Add lemon
4) Add honey/ sugar/jaggery for sweetening.

Wanna have a real Mumbaiya flavor then we suggest adding milk and sugar only to the tea decoction. Avoid using lemon and milk together.

Best Paired with: Rolls, scorns, pavs, baked savories, spicy and deep-fried snacks, sandwiches, snacks.
